Mango Gelatin

Last 2 weeks I was not able to taste the Mango tapioca that is being sold in our canteen, it’s a big hit to the employee. Since I was craving to it, I just made my own version but instead of Mango tapioca (sago) I make it in gelatin form.
I will share the recipe since most of my officemates loves it, even my little guy.  You might want to try it for the coming Media Noche (New Year’s Eve).
Ingredients:
Ferna unflavored gelatine
Mango
Alaska All purpose cream
Mango flavored condensed milk (Jersey brand)
Alaska Condensed milk
Rainbow Magic Mango pudding


I always used nestle cream to all the desserts that I make but this time I used Alaska all purpose cream and it’s creamy J
It is just easy to prepare.
First grate the Mango into strip or into you can cut into cubes and cut the Mango pudding into quarter. Set aside.
Second combine together Alaska all purpose cream, Jersey Mango flavored condensed milk and condensed milk. Continue to stir until well mix.
Prepare your gelatin, Heat one cup of water do not boil, just simmering and dissolve 3-4 sachets of Ferna unflavored gelatine continue to stir until gelatin dissolves.
Remove from fire.
And cool a little bit.
Once unflavored gelatin is cool, pour in all purpose cream mixture, add your grated Mango and stir.
Get you mango pudding and assemble it to your desired container.
After you assemble pour the all purpose cream mixture gelatin.
Refrigerate for about 3-4 hours to set the gelatin.

Do not put in freezer.
You may add more Mango fruit. (Medyo pricey ang Mango this season kaya isa lang nalagay ko)

Easy Chewy Fudgy Brownies

I will share with you an easy brownie recipe that your kid will surely like.
This is the first time I make it, and it was a success.
All ingredients are readily available in groceries/supermarkets.
Ingredients:
½ cup salted butter
8 oz (228 g) dark chocolate (chopped into small pieces)
1 cup white sugar
3 large eggs
1 teaspoon vanilla extract
½ cup + 2 table spoon (80g) all purpose flour.
¼ teaspoon salt
½ cup semi sweet chocolate chips
nuts  (optional)
What you need:
Aluminum foil
Baking pan
Oven / oven toaster

Ingredients



Melt Butter/Margarine and chocolate using a double broiler

Once melted, let it cool and set aside.
 
Sift all purpose flour, salt and cocoa powder

Whisk the sugar into the cooled chocolatey/margarine mixture.


Add the eggs one at a time and whisk.  

Mixture will look like this.

Add the flour, salt and cocoa powder

Here's the complete DIRECTIONS:

Melt the butter and chopped chocolate in a medium sauce pan, (melt it using a double broiler). Remove from the heat, and transfer into large mixing bowl and allow to slightly cool for about 10-20 minutes.
Sift flour, cocoa powder, and salt. (3x) Set aside.
Preheat your oven to 350°F or preheat your oven toaster to the highest minute.
Line the bottom of your baking pan with aluminum foil leaving an overhand on all sides. Set aside.
Whisk the granulated sugars into the cooled chocolaty/butter mixture. Add the eggs on at a time whisking until smooth after each addition. Add the vanilla then whisk.
Gently fold in the flour, cocoa powder and salt. Once combine fold in the chocolate chips and nuts.
Pour batter into the prepared baking pan and bake for 35-36 minutes using oven or 10 minutes using an oven toaster. (Lesser minute using an oven toaster since baking pan is small and you will make a 2-3 batch) or until the brownies begin to full away from the edges of the pan. Or use a toothpick. If there is only a few batter/crumbs clinging in the toothpick your brownies are done. All oven are not the same, so keep an eye on them after 30 minutes using an oven or 5 minutes using oven toaster. Use the tooth pick test to see if your brownie is ready.
Allow the brownies to cool completely. Then use a sharp knife to cut it to your desired size.

Chewy Chocolate Chips Oatmeal Cookies


Baking an oatmeal cookies is a great bonding with your child. It may be mess but your child will surely enjoy it. It will make about 24 pieces cookies.

Ingredients:
½ cup butter
½ cup white sugar
½ cup brown sugar
1 egg
½ teaspoon vanilla (2.5 ml)
½ teaspoon baking soda (2.5 ml)
1 cup all purpose flour
½ teaspoon salt (2.5 ml)
1 ½ cup quick cooking oats/instant oats
½ cup semi sweet chocolate chips




Sift/toss together all purpose flour, salt and baking soda then set aside.

In a medium bowl, cream together butter, white sugar and brown sugar. Beat in egg then stir with vanilla. Then pour the all purpose mixture. Stir. Then Mix the oats, then the semi sweet chocolate chips. Cover and chill the dough for at least one hour.








Grease your oven toaster pan. Or your cookie sheet.
Roll your dough into balls using your hands about 1 tablespoon of dough and place atleast 1 inch apart, then press each cookie using a fork.
Bake for about 5 to 10 minutes. Since I used an oven toaster make sure to watch your cookie when in a 5 minute mark. Baking will vary depends on the size of your dough.

♥ ♥ Celebrating Little Kulit's 5th birthday ♥ ♥

I booked an overnight stay at Canyon Cove on his birthday, since he wants to go to the beach and experience how to make a sand castle like what he is seeing in Disney channel.
I feel like I’m his fairy God mother, granting his wish.
On our way he was so excited, asking me from time to time “Mommy, andyan na beach?”
When we arrived at Canyon Cove he said “I’m so happy, thank you Mommy”. Awww, thats so sweet.
Aside from providing him his needs, making him happy is my greatest fulfillment.
Having a child that appreciates everything that I do for him, what more can I ask?
Anyway highway , here’s a tour at Canyon cove. We arrived at 11 am and they allow us to early check in.

Towels are provided in pool and beach area, but you need to return it if you’re going back to your room. Beach is open from 6am to 6pm and pool is until 10pm. Kiddie pool is spacious. I can let my little kulit swim on his own.

Stop over at d'banguet in tagaytay to blow his candle and to buy my favorite buco tart.
 


What I don’t like in Canyon Cove?
-          They did not provide towel inside the room.
-          I ask for the doormat when we arrived, we already check out but there still no doormat.
-          The staffs are not smiling.
-          Poor service in island café. It took us almost 30-45 minutes before the food was served.
           
Will I go back?

My little kulit enjoy our stay here, maybe yes. But if I'm with friends maybe not.

How to Commute?
From Buendia/Gil Puyat Station ride a DLTB Bus going to nasugbu.
Just tell the conductor that you will go to nasugbu proper. (You will know that your in nasugbu proper when you see chowking, mang inasal, jollibee etc)  
From nasugbu proper ride a tricyle, just tell the tricycle driver that you will go to canyon cove.
 Bus fare : 160/each

5 Bible Verses for my little kulit's 5th Birthday

My dearest Little Kulit,

As you celebrate your 5th Birthday, I consolidate 5 Bible verses that I want you to remember while growing up. Always remember that I love you BIGTIME. I love you right up to the moon and back ;)

                       

Remember God's promise to you. He promise a good future for you. If one day you face a difficulties in life, and you feel like giving up remind yourselves that God said "I know the plans I have for you". He has a plan for you. He will never give you something that you cannot handle.


Don't worry, just smile. When you worry you lose focus, it distort your thinking. TRUST GOD.
God is waiting for you, he watch you, he is always willing to help you as soon as you called up. Like Jesus said "Ask and it will be given to you". If it will not be given to you, THINK again maybe you are asking with wrong motives. When you have answered prayer don't forget to give thanks and praise.



Pray like Jabez.  No matter how big are your dreams, alway remember that everything is possible with GOD just keep on believing... when you pray, you must always do so confidently that God will provide what is best for you. Be specific in prayers.


Remember the true meaning of L♥VE. Love is not selfless.. Like the way I Love You.

Excited on his birthday


One morning I was surprised when I see the buntings and birthday banner hang in our living room. My little kulit greeted me “Good Morning Mommy, It’s my birthday”.
Oh no! He is excited and expecting a party on his birthday L
In less than a month he will turn 5, and I don’t plan any birthday party for him this year.
But don’t worry little kulit, I have other plan on your birthday. For sure you will enjoy it. J

BDO EIP - easy way to save and invest

Yesterday I attended a seminar regarding EIP of BDO.
Easy Investment Plan (EIP) is an investment schemes that enable you to attain your financial goals and financial wellness through the twin habits of regularly saving and investing.
This is the first time that I learned that they offer a monthly deduction thru your debit card for as low as 1000 per month. All you have to do is enroll and fund your ATM . When you reach 10,000 pesos they will give a COP (Confirmation of Participation).
It is the easier way to save and invest. If I will enroll for 1000 per month it just like saving 50 pesos per working days, or 33 pesos per day.
For me this is better than the time deposit, because you can withdraw your money anytime and with a higher income. But off course with a risk, since the money that you will save will invest in UITF (Unit Investment Trust Funds).
What I like about this is I will not have any excuse to start saving since this is will be deducted before I withdraw from my payroll.
A best start to save for the future of our child J

What's Inside Kinder Zoo? - Photo blog

Kinder zoo is located at the left side inside of Manila Zoo.

What‘s inside Kinder Zoo?

You need to pay separate entrance fee if you want to go inside the kinder zoo. 100php entrance fee includes photo ops with animals like snake, baby crocodile, gigantic tortoise, white monkey, black pig and different kinds of birds,. 50php for other activities.

Good thing I was able to get a 4 voucher at Metrodeal. 96Php each includes whole day entrance and 2 activities.  For me it’s not sulit to go inside if you don’t have a voucher.

Over all he enjoy everything that we do inside the Kinder zoo, especially the horseback riding, zipline and wall rock climbing.

Weekend Activity : One Sunday at Manila Zoo

As a Mum it is important to me to spend time with my little kulit.  This year I’ll make sure that we will be having a play date day or an out of town trip at least once a month, if I can make it every week, I would.  
Our first activity this year is trip to Manila zoo.
I am excited for my little kulit since this is the first time that he will go to zoo and have a close encounter with the animals. I can see the happiness in his eyes when we are inside the zoo. Seeing my little kulit happy is PRICELESS.
Upon entering the zoo just look right and you will see the famous elephant Maali. (IMO, he really need some rest) and on your right you will see Kinder Zoo.

He was so excited when he see this lagoon.. He wants to row the boat.

Other things your child can do inside the zoo. Play at the playgound.

Whenever there is a slide, He is the HAPPIEST.
Go boating. 

Where ever we go I always bring some snack and put it in microwavable container.

It doesn’t matter what I think about the zoo what matter is my little kulit enjoy our trip to this place.
And he wants to go back. J

Things to bring when going to Manila Zoo :
Extra clothes for your little one, and lampin or towel
Alcohol and wet ones
Water
Snack for you little one.
Food
If you opt for a picnic don’t forget to bring blanket / mantle or anything that you can lay on the ground
Shades for Mommy to protect your eyes from the sun ray.   
And off course don’t forget your Camera J


Entrance fee : 100/ adult and child 4 ft above and 60/child 2years old and below 4ft
For Manila resident 50/adult and 30/child just don’t forget to bring your valid ID or barangay certificate.

How to get here:
Via LRT 1, nearest station is Quirino Station, just ride a jeep with Harison plaza signage and tell the driver that you’re going to Manila Zoo or instead of jeep you can ride in pedicab.
